Ingredients: 2 tbsp butter 1/4 cup finely chopped onion 2 tbsp all purpose flour or maida 2 cups milk 1/2 tsp salt 1/4 tsp pepper 1/2 dry mustard powder 1 pack macaroni 2 cups grated cheddar 1 pack cheese singles, cut into long strips
Method: Pre-heat the oven to approx. 350F (175C). In a sauce pan, melt butter and sauté the onions in it until transparent. Add the flour and cook for a minute until the flour incorporates in the sauce. Then add milk, salt, pepper, mustard and keep stirring the sauce on medium heat until it thickens.
In another pot or a deep vessel, bring enough water to a boil with ½ tsp salt, and toss in the pasta. Cook for 8-10 minutes uncovered until al dente. Drain and rinse the macaroni in a sieve with cold water. By now, your sauce must be bubbling ferociously. Add the cheddar and cheese slices and gently mix with a wooden spatula until the cheese melts and mixes with the sauce.
In a large greased baking dish, add the macaroni and pour the prepared sauce over it. Gently fold the macaroni in the sauce and top it up with grated cheese until the pasta is completely covered. Bake in the pre-heated oven for 20-30 minutes. When the aroma of butter and browning cheese makes your stomach growl, you’ll know the dish is ready to eat. Cool for 10-15 minutes before serving.
