A classic phirni is a deliciously sweet and creamy Indian pudding made with rice and milk. Traditionally, this dessert is set in a shallow earthen dish and is garnished with dry fruits and saffron strands. Phirni in its originality is one of our favourite dishes, the creamy texture and hints of cardamom and saffron is to die for. However, we at TBD have also come to quite like phirnis that are flavoured with fresh fruits. Fruit flavoured phirnis have all the goodness of the classic phirni and then some. Apple Phirni

Ingredients:

1 cup broken rice

1 liter whole milk

1 cup sugar

2 apples

½ teaspoon cardamom (elaichi) powder

1 teaspoon cashew nuts (kaju) (thinly sliced)

2 teaspoons almonds (badam) (thinly sliced)

6-7 raisins (kismis)

Method:

Wash the broken rice thoroughly and drain it on a clean cloth and let it dry completely.

Once dried, grind the rice coarsely in a food processor.

In a deep, heavy-bottom vessel, boil the whole milk on low flame.

Once it comes to a boil add the cardamom powder and stir it continuously till it becomes thick.

Add sugar, cashew nuts and almonds.

Peel and grate the apples and add them to the mixture just before you turn of the flame. Give it a stir.

Transfer to a plate. Garnish with raisins and apples.

Chill in the refrigerator and serve.

Mango Phirni

Ingredients:

1 cup broken rice

1 liter whole milk

¾ cup condensed milk (Milkmaid/Mithai Mate)

1 cup sugar

2 teaspoons pistachio (pista) (thinly sliced)

2 teaspoons almonds (badam) (thinly sliced)

½ teaspoon cardamom (elaichi) powder

½ teaspoon cinnamon (dalchini) powder

2-4 saffron strands (kesar)

½ cup mango puree

½ cup chopped mangoes

Method:

Wash the broken rice thoroughly and drain it on a clean cloth and let it dry completely.

Once dried, grind the rice coarsely in a food processor.

In a deep, heavy-bottom vessel, boil the whole milk on low flame.

Once it comes to a boil add the cardamom and cinnamon powder and stir it continuously till it becomes thick.

Add sugar, saffron strands, pistachios and almonds.

Let it cool down completely.

Once cool, add the mango puree and give it a stir.

Transfer to a plate or bowl and garnish with chopped mangoes and a few dry fruits.

Chill in the refrigerator and serve.

Pineapple Phirni

Ingredients:

1 cup broken rice

1 liter whole milk

¾ cup condensed milk (Milkmaid/Mithai Mate)

1 cup sugar

½ teaspoon nutmeg (jaifal) powder

1 cup pineapple chunks

½ teaspoon pineapple essence

Method:

Wash the broken rice thoroughly and drain it on a clean cloth and let it dry completely.

Take the pineapple chunks and blend it in a food processor until a smooth paste is achieved.

Once dried, grind the rice coarsely in a food processor.

In a deep, heavy-bottom vessel, boil the whole milk on low flame. Stir in the pineapple puree. Add the sugar.

Once it comes to a boil add the nutmeg powder and stir it continuously till it becomes thick.

Turn of the heat and transfer into a dish. Garnish it as you like.

Serve chilled.
