Breakfast Goals! Shakshouka But With Oats
Don't we all fall in love with anything that has something to do with eggs? Even a simple French toast is enough to light up our faces at the breakfast table! In fact, one of the best egg dishes has to be the classic Shakshouka. Even though we love the basic recipe of this dish, there's definitely no harm in improvising. We present to you a healthy version of the Shakshouka; and guess what, it comprises of oats! Now, no need to find ways to gulp the tasteless oatmeal :)
Grab These Ingredients
1 cup of rajma (kidney beans)
1 teaspoon of oil
1 onion, chopped
2 cloves of garlic, chopped
500 grams of tomatoes, pureed
1 tablespoon of honey
1 teaspoon of roasted cumin powder
1 teaspoon of dried oregano
1/4 teaspoon of red chilli powder or cayenne pepper
Salt, to taste
Freshly ground pepper, to taste
40 grams of oats, cooked
A small bunch of fresh coriander
Healthy Shakshouka Coming Right Up!
Begin by soaking the beans in water for about 8 hours. Now strain the water and cook them in the pressure cooker along with salt. Once that's done, store the drained water in a separate bowl. Now heat oil in a saucepan and add the chopped onion and garlic. Stir fry it for a while and then add the tomatoes, honey, and spices. Now add the cooked beans into the gravy and cover the pan so that the beans soak in the spicy flavour.
In a separate pan, combine the baked beans with the cooked oats. Also add the drained water that you had stored earlier. Bring it to a boil. Now gently break the eggs onto the mixture but do not mix it at all. Cover the pan so that the eggs are cooked thoroughly. Once done, garnish with coriander and serve hot!
