Grilled Corn With Herb Butter
1 garlic clove, minced
1 tablespoon mixed minced fresh herbs (such as chives, parsley, rosemary and thyme)
1 teaspoon kosher salt plus more
1/2 teaspoon freshly ground black pepper
4 ears of corn
1 tablespoon olive oil
Method: Husk the corn, cut into three-inch pieces and set aside. Mix the butter with garlic, salt, pepper and the herbs in a small bowl. Brush the corn lightly with olive oil and grill them until tender and charred slightly. A charcoal grill works best for this recipe and really brings out the flavor but you can also use an oven grill. Transfer the corn to a plate and brush the herb butter generously over each piece.
Marinated Grilled Shrimp
3 cloves garlic, minced
1/3 cup olive oil
1/4 cup tomato sauce
2 tablespoons vinegar
2 tablespoons chopped fresh basil
1/2 teaspoon salt
1/4 teaspoon finely chopped cayenne pepper
2 pounds fresh shrimp, peeled and de-veined
Method: In a large bowl, mix together garlic, olive oil, tomato sauce, and vinegar. Then season with basil, salt, and cayenne pepper and toss in the shrimp. Let the shrimp marinate for 30 minutes. Grill the shrimp in skewers until opaque and tender. Serve with your choice of chutney or barbeque sauce.
1 yellow bell pepper, diced
1/2 onion, diced
1 bowl boneless chicken breast pieces
1 cup canned pineapple chunks, drained
1/4 cup barbeque sauce
1 tbsp olive oil
Method: Prepare your grill and lightly grease it with oil. Thread the chicken and the veggies onto your skewers and grease with oil and barbeque sauce. Grill until the chicken is no longer pink from the center (7 minutes should do well).
Honey Mustard Grilled Chicken Drumsticks
1/3 cup mustard sauce or paste
¼ cup honey
2 tbsp mayonnaise
1 tsp barbeque sauce or any sauce of your choice
4-5 chicken drumsticks
Method: Make a marinade by mixing together mustard sauce, honey, mayonnaise and barbeque sauce. Toss in the chicken drumsticks and marinate for 15-20 minutes. Grill in a grate barbeque over medium heat for 20 minutes, turning occasionally.
