Method: In a large mixing bowl, add the yeast, lukewarm water, and 1/2 cup flour, mix well and let it sit for 30 minutes. Whisk together the remaining 3 1/2 cups flour and salt in another bowl and set aside. Once the yeast mixture is nice and bubbly and looks like foamy beer, add 3/4 cup cold water and olive oil. Using a dough processor, process the yeast mixture on slow and add the flour mixture slowly, a little at a time. Mix the dough for about 5 minutes, until it rises visibly.

Remove and place the dough in a large bowl that has been greased with olive oil. Ensure to coat all sides of the dough with oil by flipping it over in the bowl a few times. Cover the bowl loosely with a muslin cloth and let it rise until almost double in size. After 2 hours, punch it down, and let it rise for another hour.
