But you’d be surprised to know that the authentic food prepared in their kitchens rarely has any taste let alone be hot and spicy. What we as Indians are fond of is the Indo-Chinese food that’s adapted to suit our palette. What’s the most important ingredient in any of your favorite Chinese dish? Trust me; I could actually hear you scream ‘schezwan sauce!’ And I agree! No dish is complete without a spoonful of the tasty, spicy, red hot schezwan. But why depend upon the restaurants and foodstuff brands to serve you a preservative-laden sauce, when you can easily stir up one in your very own kitchen! Yes, you heard me; this recipe for delicious homemade schezwan sauce will save your life! Use it to dip French fries, or add it to your fried rice or Hakka noodles to spice things up, I bet you can never have enough of it. Try it out!
150 gms whole dry red chillies (paste)
100 gms chopped garlic
50 gms chopped ginger
2 green chillies finely chopped
1 tbsp vinegar
2 tsp sugar
Salt to taste
5 tbsp tomato ketchup
½ cup oil
Red food colour
Method: Heat the oil in a saucepan and fry the garlic and sauté for a min. Next add green chillies and ginger and cook just until the smell of ginger garlic goes away but it should not change colour. Now add the dry red chilli paste. Add celery leaves and cook for 10 minutes on medium flame. Now add vinegar, salt, sugar and tomato ketchup and cook until the sauce forms a layer of oil on the top. Finally, add the food colour and give it a stir.
Your delicious schezwan sauce is ready! Wasn’t it easy? You can serve this sauce immediately or store it at room temperature in a glass bottle with an air tight lid for later use.
