The Method

Drain the dal and use a blender to grind it into a thick paste. Transfer this into a bowl and add salt, baking powder and turmeric powder. Mix it well and keep this aside. In a separate bowl, mix the chopped capsicum, onion, tomatoes and chillies. It’s time to heat your non-stick tawa. Pour a ladleful of the dal batter and spread it evenly in a round shape. Ensure that the uttapam is neither too thick, nor too thin. While it’s cooking, drizzle a little oil around the sides. Spread the veggie topping over it, let it cook for a minute and then turn the uttapam over. Again drizzle a little oil around the sides until both the sides turn golden. Serve hot with traditional coconut chutney or tomato ketchup (the lazy dip) on the side.
