Made with lots of nuts and flavoured with zaafraan (kesar or saffron) this is one of the yummiest quickly whipped desserts that I have so far tasted. Try it out and tell us how you like it.

Ingredients:

½ cup sooji rawa or semolina

3 tbsp ghee

¼ cup mixed chopped nuts (cashews, almonds, raisins)

½ cup granulated sugar

1 and ¼ cup water

1 tsp zaafraan (saffron strands)

¼tsp cardamom powder

A pinch of salt

How to proceed: Heat the ghee in a deep sauce pan over medium/low flame and add the chopped nuts. Roast the nuts for a minute, then add the semolina or sooji ka rawa and roast it until it turns light golden and gives out a wonderful aroma. Crush the zaafraan or saffron strands with a tablespoon of sugar in a mortar and pestle. Add to the sooji and mix well. Next, add some lukewarm water to the sooji making sure to constantly stir it to avoid burning. Keep cooking on low flame until you get the desired consistency. Finally, add the cardamom powder and a pinch of salt and cook for a few more minutes. Your special zaafraani sheera is done in minutes! This recipe serves 4 people, so you can double the quantity to make 8 generous servings.
