While everyone is busy planning where to spend the NYE, with a limited budget and just one visit to the supermarket, you can treat yourself right in your house with this super easy recipe for white cheese and chicken lasagna! Lasagna Sheets – 9
Chicken Meat – Cooked, 2 cups
Spinach – 300 g
Mozzarella Cheese – Shredded, 4 cups
Parmesan Cheese – Grated, 1 ¼ cups
Ricotta Cheese – 2 cups
Chicken Broth – 2 cups
Butter – ½ cup
Onion – Chopped, 1
All-Purpose Flour – ½ cup
Milk – 1 ½ cups
Garlic – 1 clove
Salt – 1 teaspoon
Dried Basil – 1 teaspoon
Oregano – 1 teaspoon
Parsley – 1 tablespoon
Ground Black Pepper – ½ teaspoon

Begin by preheating the oven to 175 C. in a large pot, boil salted water and cook the lasagna sheets in the boiling water for about 8-10 minutes. Once the sheets are cooked, drain them and rinse ‘em with cold water.
In a large saucepan, melt the butter over medium heat. Add in the chopped onion and garlic, cook until its tender while stirring frequently. Stir in the salt and flour, over medium heat, until it is all bubbly. Now, add the chicken broth and milk. Stir it all constantly for about a minute as the mixture comes to a boil. Add in the mozzarella and ¼ cup of Parmesan, stir until all the ingredients are combined really well. Season the mixture with oregano, basil, and black pepper. Remove the pan from heat and set aside.
Grease the baking dish generously and layer the lasagna sheets. Layer the sheets with ricotta, chicken. Put another layer of the sheets and this time; put the sauce mixture, spinach, and the rest of the mozzarella cheese and some parmesan cheese. Put the sheets again and spread the remaining sauce evenly. Sprinkle parsley and the rest of the parmesan cheese. Bake for 40 minutes in the preheated oven.
