1) Cream Cheese Tortilla Pinwheels
What you need
- 1/2 cup softened cream cheese
- 2 tbsp onions
- 1 small tomato, deseeded and finely chopped
- 1 small green chili, deseeded and finely chopped
- 1 small spring onion, finely chopped
- few basil leaves and chopped celery
- A pinch of salt
- 3-4 tortilas
Method
- Mix cream cheese, onions, tomatoes, green chilies, spring onions and salt in a big bowl to make a cream cheese spread.
- Warm the tortillas on both sides for few seconds.
- Spread a thick layer of cream cheese mixture on the lightly roasted tortillas.
- Put basil leaves and celery over it.
- Roll them up tightly, wrap them in cling plastic wrap and refrigerate them until served.
- Before serving, cut out the sides of the tortillas and cut them up into 1-inch pinwheels.

2) Chocolate Bruschetta
What you need
- 10 slices of diagonally cut French bread
- cooking spray
- 5 ounces of sweet chocolate, finely chopped (1 cup)
- 1/4 tsp coarse sea salt
- grated orange rind
Method
- Preheat boiler.
- Lightly coat bread with cooking spray. Place bread on a baking sheet; broil 3 minutes on each side or until toasted. Remove bread from oven.
- Reduce oven temperature to 350°.
- Sprinkle each bread slice with about 1 1/2 tablespoons chocolate. Bake 5 minutes or until chocolate melts. Sprinkle evenly with salt; garnish with orange rind, if desired. Serve warm.

3) Caprese Salad Skewers
What you need
- 1 cup balsamic vinegar
- 1 tsp honey
- 18-20 cherry tomatoes
- 18-20 big basil leaves
- 9-10 mozzarella cubes
- 9-10 tsp olive oil
- salt as required
- pepper as required
- 10-12 (4-inch) wooden or metal skewers
Method
- Boil the vinegar for about 5 mins and add honey to it and mix well.
- Thread cherry tomatoes, basil leaves and mozzarella cheeses cubes onto the skewers.
- Drizzle some olive oil and balsamic vinegar mix.
- Also, sprinkle some salt and pepper onto the skewers.
