
A Dessert That's Healthy – Lemon Mousse With Strawberries

Grab These Ingredients
2 cups of strawberries
About 7g of gelatine
¾ cup of sugar
2 teaspoons of grated lemon rind
½ cup of fresh lemon juice
1 tablespoon of extra light olive oil
1 large egg
1 cup of fat-free plain yogurt

A Sweet Affair
Begin preparing for your lemon mouse by hulling the strawberries and slicing them thickly. Sprinkle the gelatine over ¼ cup of cold water and allow it to stand for 5 minutes to soften.
Bring out a medium-sized saucepan and combine ¼ cup of water with the sugar, lemon rind, lemon juice, olive oil, and egg. Cook it over a low flame and keep whisking it continuously. After about 5 minutes, when you're sure that no lumps remain in the mixture, pour the softened gelatine and cook for another minute.
The last step involves removing your almost-done mousse from heat and transferring it to a medium-sized bowl, so that it cools soon. Now whisk in the yoghurt. The strawberries will form the third layer of the mousse. Similarly, layer your mousse in all your dessert bowls. Refrigerate them for three hours and relish your chilled lemon mousse with strawberries!
