Health Served In A Bowl: Tomato Egg Drop Soup
In our busy lives, we often miss out on a healthy bowl of soup. Seldom do we give it its righteous place in the kitchen, when in fact, soups are one of the healthiest things that you could consume on a daily basis. Apart from that, even something as basic as the tomato soup tastes like heaven! And needless to say, it does not require infinite amount of culinary knowledge to whip up a bowl of filling and delicious soup ;)
Now we understand the regular bowl of soup can taste plain boring at times, especially for the health freaks who need to have several bowls a day. So here we are with an unconventional preparation of soup: the tomato egg drop soup. Lazy chefs, please take note that it is very simple ;)
4 tomatoes, finely chopped
2 egg whites
2 spoons of corn flour
4 cups of vegetable stock
A spoon of oil
A small piece of ginger, finely chopped
2 garlic cloves, finely chopped
1 onion, finely chopped
4 spoons of tomato sauce
2 spoons of vinegar
Fresh coriander, chopped
It's Time For Some Soupy Delight!
Whisk the egg whites lightly in a bowl. Mix the corn flour in one cup of vegetable stock. Heat oil in a pan and stir fry garlic, ginger and onion for a minute. Now add the tomatoes and tomato sauce and cook on high flame for two minutes. Add the remaining 3 cups of vegetable stock and bring it to boil. Add a dash of salt and sugar once they start boiling.
Stir in the corn flour mixture and cook until you achieve the required consistency of the soup. Add vinegar and the whisked egg whites. Be very gentle with the egg whites because it should form egg threads on top. Garnish with chopped coriander and serve hot!
A bowl of soup should be on our regular diet chart and not just an option when it's time for a four-course meal. This tomato egg drop soup is a novelty and your guests will surely be full of it even before the main course is served!
