Things You'll Need
2 whole pomfrets
10 shallots (large onions)
4 large green chilies (seeded and chopped)
10 garlic cloves
1 tablespoon fish sauce
4 tablespoons lemon juice
1 teaspoon brown sugar
1 teaspoon soy sauce
1 tablespoon oil
8 kaffir lime leaves (shredded)
½ teaspoon salt
2 stalks of spring onion greens (chopped)
Let's Grill Some Fish
First, clean the fish and make small slits on both sides. Now, take an aluminium foil and wrap up the chilies, onions and garlic and place it under a hot grill for about ten minutes. Take it out and let it cool for some time. Once it is cool enough to handle, transfer them to a mortal and pestle and pound them to make a course paste. You can also grind it in a mixer, but it definitely tastes better when hand pounded.
Add lemon juice, fish sauce, soy sauce, lime leaves, salt, brown sugar and oil into the coarse mixture and mix well. Next, stuff the fragrant and delicious paste into the slits in the fish. Generously smear some of the paste on the skin too. Can't stop drooling right! Be patient and cook on.
Now it's time to grill the fish. Grill the pomfrets for five minutes on each side, until the flesh is cooked through. Once your cooking space fills up with the mouthwatering smell of the cooked fish, serve it on a big ceramic plate and garnish with chopped spring onion greens. Serve hot!
