Method
Boil the elbow shaped macaroni in a pan till it is properly cooked. It should be done in about 7-9 minutes. Take it off the flame once cooked and rinse it with hot water. This will prevent your macaroni from over cooking. Set it aside once you've rinsed it. Take another pan and put butter in it. Make sure to keep an eye on the butter, it burns quickly. Add flour to it and keep stirring with a whisk. Let it cook for 2 minutes. Quickly heat the milk in an oven for about 30 seconds. Add the warm milk to the pan and stir continuously to avoid any lumps. Heat the mixture till it forms a thick sauce.
This sauce should not take more than 2 minutes since the milk was warmed earlier. Once it's done, take it off the flame and add the cheeses. Mix till the cheeses have completely melted. Once that is done, carefully fold the macaroni to mix them well. Make sure you gently fold it to keep the macaroni from breaking.
Take a baking sheet and grease it generously. Use a spoon to make small balls of it and place it on the sheet. Refrigerate for at least 2 hours before you fry them.
Take them out and get ready to fry them! Take both the eggs in a bowl, beat ‘em up. Take breadcrumbs in another bowl. Heat the oil up in a pan and start by dipping the balls in eggs and then roll them in the breadcrumbs. Once the oil is heated, fry the bites for about 3-5 minutes till they look nice and crisp.
You can also freeze these bites after rolling them in bread crumbs and fry them whenever required.
