Start by washing the potatoes and put them to boil. Once the potatoes are tender, let it cool down for a while and peel them off. Cut the potatoes into pieces of 4-6 and mash them. (When you cut the potatoes, it becomes easier to mash them, thus saving your time) Mash them till there are no lumps. Add pepper powder, salt, cumin powder, chili flakes, sliced onion and ¼cup of breadcrumbs and mix well. The only purpose of adding breadcrumbs to the mixture is to take its extra moisture away.
Rub a few drops of oil on your palm before you begin to make the pakode, it will prevent the mixture from sticking to your palm. Once you rub oil on your palm, take some mixture and flatten it out on your palm, take a piece of cheese cube and then wrap the mixture around the cube carefully.
Make sure to size the cheese cubes according to the desired size of the pakode.
Lay the rest of the breadcrumbs in a plate.
Heat the oil in a frying pan. Make a paste out of the corn flour. How, you ask? Just take a small bowl, fill it with water and add corn flour to it. Make sure to keep stirring to avoid lumps. Once the paste is smooth, dip the prepared pakode in the corn flour paste, and then roll them in the breadcrumbs. The corn flour paste will help the breadcrumbs stick to the pakode.
Once the oil is heated put the pakode in carefully. Let them fry on a medium flame till they look golden brown and crispy.
Set it on a paper towel to soak the excess oil away and serve it with your favorite dip. Voila! Your Potato and Cheese Pakode are ready to make your lazy Sunday even better!
