Chop the onion, carrot, red and green capsicums, and green chillies finely. Transfer these chopped veggies into a mixing bowl and add oregano, mayonnaise, and cheese. Mix well. This is the filling of your mushrooms.
In a separate bowl, combine flour, water, and salt. Whisk until the mixture turns smooth. Prep your mushrooms by gently pulling out the stem. Be gentle so as to not rip the mushroom apart.
Carefully stuff your fillinginto each mushroom. Now dip a stuffed mushroom in the flour mixture so that it gets coated on all sides. After this, dip it in your bowl of breadcrumbs for that added crunchiness.
Heat oil in deep frying pan and fry your coated stuffed mushrooms until they turn golden brown. Serve your mushroom delicacy hot with a tangy dip or added mayonnaise at the side! Bliss!
