5-6 orange segments (cut in halves)
Segments of 1 medium sweet lime [mosambi] (cut in halves)
4 lettuce leaves
1 medium cucumber (peeled and cut into 1-inch strips)
4-5 fresh mint leaves
1 tablespoon lemon juice
½ medium carrot (cut into thin strips)
1 ½ teaspoons extra-virgin olive oil
A pinch of red chili flakes
¼ teaspoon salt
1 small tomato (quartered and sliced)
Time To Toss It Up
Start by trimming the lettuce leaves and washing them thoroughly under running water. Then, soak the leaves in chilled water, so that they stay fresh and crunchy. Now, mix together the lemon juice, red chilli flakes, mint leaves and the extra-virgin olive oil. Add some salt and whisk well. Leave it aside.
Next, drain the lettuce leaves and tear them up into bite-sized pieces. Bring out a large serving dish, and spread a layer of torn lettuce leaves on it. Over the bed of lettuce drizzle one-fourth of the dressing, just so that the lettuce is coated with it.
Now, add the sweet lime, carrot, orange, cucumber and tomato in a bowl and drizzle the dressing over it. Give a good toss to mix everything together. Now spoon this onto the glossy lettuce bed. Serve right away!
