Spice Up Your Iftaar With This Easy Khuska Biryani Recipe
Thinking of making something special for Iftaar this year? How about some simple yet mouthwatering biryani? Here is a quick and yummilicious khuska biryani recipe that will instantly become a popular iftaar favourite! This iftaar, let's try something new.
For The Biryani Preparation:
2 cups of basmati rice (soaked for 10 minutes)
½ cup yogurt
1.5 cup chicken stock
2 onions (chopped)
5-6 green chilies (chopped)
1 tablespoon ginger garlic paste
1.5 cup coconut milk (diluted)
1 teaspoon fennel seeds/saunf (crushed)
1 teaspoon cumin seeds/jeera
A handful of mint leaves/pudina
A handful of fresh coriander
2-3 tablespoon ghee or oil
Salt to taste
Whole spices (2 bay leaves [tejpatta], 2 cinnamon sticks [dalchini], 3 cardamon [elaichi], 4 cloves [laung], 1 star anise [chakra phool]).
Let's Cook Some Biryani
Heat the oil or ghee in a deep-bottomed pan and throw in the whole garam masala spices. Now, add in the cumin and fennel seeds and let them crackle. Add in the chopped onions, green chilies and sweat them for about a minute, then add the ginger garlic paste and sauté. Meanwhile, soak the saffron strands in a few teaspoons of milk and keep aside.
Next, add the chopped tomatoes, coriander and mint leaves and mix well. After a few minutes pour in the yogurt, coconut milk, chicken stock and sprinkle some salt and bring it all to a boil.
Add the soaked rice to this yummy mixture and reduce the flame. Cover the pot with a tight lid and cook the rice low and slow. Wait for around half an hour before you pop the lid open.
Now, sprinkle the saffron milk on top of the rice. Take a fork and fluff up the rice using it. Garnish with a generous handful of chopped coriander leaves, fried onion or chopped nuts.
