Store Up Masala Kaju AKA Spicy Cashew Nut Love
I am a big sucker for cashew nuts! For a happy life, I need at least a few of them each day :)
Even universally, kaju AKA cashew nuts are the one of the most loved dried fruits. But I totally understand if you're pretty bored with the usual way of serving cashew nuts and totally love the masaledaar kaju that's available in the market. Guess what, you can easily make them at home now!
Masala kaju is also super useful when you're listing sudden-hunger-pang food items. Stack them up and munch on your favourite snack any time. You can easily carry a little container filled with these beauties to work and wave a goodbye to those 5 PM stomach grumblings.

Grab These Ingredients
2 cups raw cashew nuts
2 tablespoons oil
1 teaspoon salt
1/4 teaspoon black salt
1/8 teaspoon black pepper
1/4 teaspoon red pepper
1 teaspoon roasted ground cumin seed powder
1/2 teaspoon mango powder
Crazy For Roasted Cashew Nuts?
Bring out a large skillet and heat oil in it. Begin roasting the cashew nuts on low heat while stirring continuously. You'll probably need to do this for around 10 minutes for that oh-so-perfect golden brown tinge. Do not leave it unattended in order to prevent the nuts from acquiring the burnt taste.
Once that's done, transfer the roasted nuts in a bowl and let them cool a little. However, don't bring them to room temperature. Meanwhile, mix all the spices in a small bowl. Sprinkle the resultant powder over the nuts generously and toss them for an even coating.
Your store of masala kaju is all ready. Transfer them to an air-tight container when they come to room temperature. Oh and by the way, you could do the same to roasted peanuts! :)
