Yummy, Healthy Bowl Of Chicken Noodle Soup
Here's a confession – I'm a die-hard chicken lover and an even bigger die-hard noodle lover! So what could be my idea of a foodie's heaven? No points for guessing... a bowl with chicken and noodles! Today, I'm gonna share my culinary love for chicken noodle soup; it's easy, it's quick and super healthy. Let's begin with the treat.
A Look At The Ingredients
300 gms wholewheat noodles
1 cup bean sprouts, blanched
1 onion, sliced
White pepper powder
Fresh coriander, chopped
For the broth:
10 cups chicken stock
500 gms boneless chicken, skinned and cubed
A piece of cinnamon
4 spring onions, sliced
A piece of ginger, crushed
Flavourful Soup, On Its Way!
Begin by preparing the broth. Combine the chicken stock, chicken pieces, cinnamon, spring onions and ginger in a large pan and set it to boil over high heat. Leave it to simmer for as long as you can and don't forget to skim off the froth as it rises to the surface. Once the broth attains the desired consistency, remove it from heat, strain the mixture, and keep the clear broth aside (preferably on low heat to keep it warm). Let the chicken pieces cool and then slice them into thin strips.
Once you're done with the broth, it's time to focus on the noodles. Boil your noodles in plenty of water until they soften; drain and rinse in cold water. Now for the last part – Place the noodles in serving bowls, top it with bean sprouts, chicken strips, and spring onions. Pour the hot broth over. Garnish your chicken noodle soup with white pepper powder and chopped coriander and serve it piping hot!
